Sparkly Cranberry Maple Syrup
Want a breakfast or brunch idea for the holidays that will shimmer and shine? Try making Sparkly Cranberry Maple Syrup! It's easy- only 3 ingredients - and so delicious over pancakes or waffles. When I tried this for Christmas a few years ago, I instantly knew it would become a favorite (it even got a "heart" in my cooking journal). Sparkly Cranberry Maple Syrup
1 cup Sparkle Maple Syrup
3/4 cup fresh cranberries, rinsed and drained
1/2 t. Mexican Vanilla extract
Combine the cranberries, maple syrup and vanilla in a saucepan over medium heat.
When it starts to bubble, reduce heat to low and simmer.
Stir occasionally, until the berries pop (about 20 minutes).
When they have reduced down to the consistency of "Thanksgiving Cranberry Sauce" - the syrup is ready.
Serve over waffles or pancakes (like our favorite mix here). Enjoy!
