Pomegranate & Pear Salad with Prickly Pear Dressing

This salad is refreshing and delicious, and more importantly, it's easy to make.

You will need:

1/2 cup raw pecans, toasted

6 oz baby arugula

2 oz feta cheese (or goat cheese)

1 large pear, thinly sliced

1 honeycrisp apple or gala apple, thinly sliced

arils from one pomegranate

1/4 cup extra virgin olive oil (we love this one)

1/4 cup prickly pear balsamic vinegar (get it here)

1/2 teaspoon fine or kosher sea salt

1/4 teaspoon fresh ground pepper

Arrange the arugula, pears, apples and pomegranate seeds on a serving plate.  Then add the cheese and toasted pecans. 

In a small bowl, whisk together the olive oil, prickly pear balsamic vinegar, salt and pepper.  Drizzle over the salad and serve.  Enjoy!
