Air Fryer Roasted Pumpkin Seeds

If you love using pumpkin to cook this time of year, or if you just enjoy carving jack-o-lanterns but don't want the seeds to go to waste, try air frying your pumpkin seeds!  We think this recipe is one of the easiest to end up with those deliciously crunchy, salty seeds.

Air Fryer Roasted Pumpkin Seeds

First, you'll want to harvest the seeds from the pumpkin and wash them.  Just put them in a colander and run water over them as you wipe away any of the stringy pumpkin bits. If you need a great pumpkin carving tool set, this one is our favorite.

Next, heat up a pot of water to boiling, then add the clean seeds.  Cook them for about 5 minutes and then drain them and place on a clean dishtowel to dry a little bit.

While the seeds are cooling off, melt 1/4 -1/2 of a stick of butter.  Set aside.

In a large bowl, add the seeds and pour the butter over them.  Sprinkle garlic salt (as much as you desire) and toss to coat.

Pour the seeds into your air fryer basket and shake to distribute them more evenly.

Air fry at 360 degrees from 15-20 minutes, pausing to toss them about halfway through.  Just keep checking them every couple of minutes after the 15 minute mark and pull the seeds when they reach your desired doneness.

Enjoy!  Roasted pumpkin seeds are delicious on their own, but we also love them sprinkled on a fall salad, or over Pumpkin Soup, or ground up as a pesto.  The possibilities are endless!
