Cabbage and Cilantro Lime Slaw
This cole slaw is different - it's very light and refreshing - and it keeps well in the refrigerator, so it's a great "make ahead" dish. I actually think it tastes even better after sitting for a day to marinate, so I recommend making this dish the day before your get-together.
Cabbage & Cilantro Lime Slaw
1/2 medium head green cabbage, thinly sliced
1/2 thinly sliced medium white onion
1/2 C. fresh cilantro, chopped
3 T. fresh lime juice (about 1.5 limes)
1 T. apple cider vinegar
salt and pepper to taste
In a large bowl, add the sliced cabbage, onion and cilantro.
In a small bowl or measuring cup, whisk the lime juice and apple cider vinegar. Add salt and pepper and combine.
Pour the lime juice mixture over the cabbage/onion/cilantro and toss with tongs until evenly coated.
Serve immediately or refrigerate until ready to use.
Just give it a re-toss and it's good to go!
